Hybrid POS: food and retail (cafés, bakeries, wineries)
Hybrid operations (cafés selling beans and merchandise, bakeries with retail and on-premise dining, wineries with tasting room and bottle sales) need POS systems that handle both food modifiers AND retail inventory. The cohort's restaurant specialists (Toast) and retail specialists (Shopify POS) miss half the use case.
The reasoning.
Square is the strongest fit, because its unified plans (Free, Plus and Premium, plus a custom-priced Pro tier above $250,000 a year) carry retail, restaurant and appointments tooling in one subscription at one price per location. That is exactly the hybrid problem solved. Lightspeed has separate Retail and Restaurant products that can run together at one business. Clover sells restaurant and retail systems separately but on the same hardware and the same 2.3% + 10c card rate, so a hybrid can mix them. Shopify POS works for retail-heavy hybrids with a light food component, remembering the $89 per-location POS Pro add-on.
Vendors that don't fit this vertical.
Specialist restaurant POS (Toast, TouchBistro, NCR Aloha) for any hybrid operation with retail above 30% of revenue. Specialist retail POS (Shopify-only) for hybrids with significant on-premise dining.
The cost most buyers underestimate here.
Paying twice for one business. The real hybrid trap is buying two subscriptions, or two systems, to cover two modes: a restaurant POS for the counter and a retail POS for the shelves, each with its own monthly fee per location. Square's unified plans are the cheapest escape from that, because one subscription per location covers both. If you go the two-product route, price the second subscription for every location and for the full term before deciding, and check whether inventory genuinely syncs between the two or whether you are about to count stock twice.
